I learned about this easy family staple at a Minute® Rice event with several other Atlanta bloggers, in which I was also introduced to Minute® Rice’s Recipe website. If you find yourself in a rut again anytime soon, make sure to check out that site for many more great family meals! Now time for the recipe:
- Minute® Rice Multi-Grain Medley
- 1/2 Cup Sweet Chili Dipping Sauce
- 1/4 TBSP Butter
- 1/4 cup Coconut Oil
- 4 Chicken Breasts, sliced ALMOST in half
- 1 Cup Chiptle Seasoning
- 1 Cup Spinach
- 1 Cup Sharp Cheddar
- 20 toothpicks soaked in water
- Preheat oven to 350 degrees and grease a 2 Qt. glass Pyrex with coconut oil.
- Place a large pan on the stove top at medium heat with 1/4 cup coconut oil.
- Rub both sides of chicken with Chipotle seasoning, then sear each side in coconut oil for 2 minutes.
- Place each chicken in Pyrex and stuff inside with 1/4 cup spinach and 1/4 cup cheddar cheese. Then seal chicken closed with 5 toothpicks along the open edge.
- Place Pyrex in oven and cook for 30-35 minutes or until slightly brown on the outside and fully cooked on the inside.
- Then cook the Minute® Rice. Follow the exact instructions on the box and you will have perfectly cooked rice every time. For the adult portions I use 1/2 cup rice and mix it with 1 TBSP sweet chili sauce. For the kids I take 1/2 cup rice and use 1/4 TBSP butter to flavor.
- Serve and enjoy!

This looks so simple and so good! I've been so bad about cooking this pregnancy… So tired. I pick up dinner most nights, which is terrible for health and the bank account. Thanks for sharing!

Life has been so crazy lately {when isn't it} that I've been doing so much cooking and food prep on the weekend. It helps me to keep my sanity during the week!
I'm always looking for new, healthy ideas for meal time. Thanks for sharing!
Looks delish! I love meals that are easy and tasty.
That looks so simple yet tasty. My family would love this because, well cheese. They are cheese fanatics! Thank you for sharing, I will definitely be giving this a try!
That sounds yummy. And so easy. I'm always on the hunt for recipes that would be easy during the week, and this one sounds like something everyone would eat!
Yum! Thanks for the share. We usually stick to brown rice, but I'll have to keep an eye out for this. Sounds like a good one to switch into the rotation 😉
This sounds absolutely delicious! I don't tap into the chipotle flavor enough, even though it's so delicious. Thanks for the inspiration!
I will have to eat this for lunch since I'm watching my carbs at night. Boo on the 5lbs that has found me!
Yum!!!!! Please come cook at my house! It looks amazing!
Nice to see they are getting multi-grain medleys together! This looks very tasty
Yum! I never can pull off rice, but maybe minute rice will be my new saving grace. 😉
I've always wanted to try and stuff chicken – but I rarely make chicken at home actually, for fear that I won't execute it correctly – thus it will end up dry!
Wow I had no idea minute rice now came in so many variations! That chicken looks delicious!
